INGREDIENTS
- 2 kg baby new potatoes
- 30 ml white vinegar
- 5 spring onions, cut into 5 mm pieces
- 100 g flat-leafed parsley, chopped
- 100 g chervil, chopped
- 100 g chives, finely chopped
- 2 tbsp mint, finely chopped
- 50 ml olive oil
- Salt pepper as needed
DIRECTIONS
- Scrub the potatoes and boil in a large pan of salted water until soft but still firm, then drain and put in a large bowl.
- Add the white vinegar and spring onions to the bowl, mix gently and leave to cool.
- Just before serving, add the herbs, olive oil, and salt and freshly ground pepper to taste.
